Lemon Shrimp Salad
"Fabulous Food!”
Original recipe yield: 8 servings
INGREDIENTS:
• 1/2 green cabbage, thinly sliced
• 1 red bell pepper, thinly sliced
• 4 green onions, minced
• 1 1/2 cups cooked shrimp, deveined
• 1/2 cup fresh parsley
• 1 cup mayonnaise
• 1/2 cup sour cream
• Juice of 1 lemon
• 1 teaspoons pepper
• 1/2 teaspoon salt or to taste
• About 8 cups mixed salad greens
• 1-2 carrots, grated
• 1 pint cherry tomatoes
DIRECTIONS:
1. Mix mayonnaise, sour cream, salt,
pepper and lemon juice.
2. In large bowl, mix all the ingredients
with the dressing and chill well .
3. Divide greens and tomatoes between
8 salad plates. Top with the shrimp/cabbage mixture. Sprinkle
with grated carrots.
