Banana Mandarin Meringue Pie
“This is a twist on an old favorite. You can also use oranges or any other citrus fruit you have to hand.”
Original yield: makes 1 pie

INGREDIENTS:
• 1 (6-ounce) prepared graham cracker pie crust
• 1 (8-ounce) package cream cheese, softened
• 1 can sweetened condensed milk
   (NOT evaporated milk)
• 1/3 cup fresh squeezed lemon juice
• 1 teaspoon vanilla extract
• 3 medium bananas, divided
• 15 ounces of mandarin orange segments,
   divided
For the Meringue:
• 3 Egg Whites
• 50g/2oz Caster Sugar

DIRECTIONS:
1. In large bowl, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth. Stir in lemon juice and vanilla.
2. Slice 2 bananas and dip in lemon juice and drain. Line bottom of crust with bananas and 2/3 of orange segments. Pour filling over fruit.
3. Chill 3 hours, or until set.
4. Before serving, slice remaining banana; dip in lemon juice and drain. Garnish top with banana slices and remaining orange segments.
5. Store leftovers covered in refrigerator.
